BBQ Cheddar Meatloaf is a flavorful and hearty dish that combines ground beef with BBQ sauce and cheddar cheese, making it a family favorite.

Ingredients

Scale
  • 1 ½ pounds ground beef
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup shredded cheddar cheese
  • ½ cup BBQ sauce (plus extra for topping)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, shredded cheddar cheese, BBQ sauce, Worcestershire sauce, salt, black pepper, smoked paprika, and cayenne pepper (if using). Mix until just combined; avoid overmixing.
  3. Transfer the meat mixture to a loaf pan and shape it into a loaf.
  4. Spread a layer of BBQ sauce on top of the meatloaf for added flavor.
  5. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
  6. Remove from the oven and let it rest for 10 minutes before slicing.
  7. Serve warm with additional BBQ sauce on the side.

Notes

  • For a twist, try adding diced bell peppers or mushrooms to the meat mixture for extra flavor and nutrition.
  • You can also substitute ground turkey or chicken for a leaner option.
