- 2 cups cooked, shredded chicken
- 1 cup barbecue sauce
- 2 cups cottage cheese
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 avocado, diced
- 1/2 cup chopped green onions
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika (optional)
Instructions
- In a medium bowl, combine the shredded chicken and barbecue sauce. Mix well until the chicken is fully coated. Set aside.
- In a separate bowl, mix the cottage cheese with garlic powder, salt, and pepper. Stir until well combined.
- In a large serving bowl or individual bowls, layer the cottage cheese mixture at the bottom.
- Top the cottage cheese with the BBQ chicken mixture.
- Add cherry tomatoes, corn, and diced avocado on top of the chicken.
- Drizzle with olive oil and sprinkle with smoked paprika if using.
- Garnish with chopped green onions before serving.
