Description

BBQ Pineapple Chicken Kabobs are a delicious and flavorful dish that combines tender chicken, sweet pineapple, and colorful vegetables, all grilled to perfection.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup fresh pineapple, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into wedges
  • 1/2 cup barbecue sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, combine the chicken, pineapple, red bell pepper, green bell pepper, and red onion.
  3. In a separate small bowl, mix the barbecue sauce, olive oil, garlic powder, onion powder, salt, and pepper. Pour this mixture over the chicken and vegetables, tossing to coat evenly.
  4. Thread the chicken, pineapple, and vegetables onto the skewers, alternating between each ingredient.
  5. Place the skewers on the preheated grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F.
  6. Remove the kabobs from the grill and let them rest for a few minutes before serving.

Notes

  • For extra flavor, marinate the chicken in the barbecue sauce mixture for at least 30 minutes before threading onto the skewers.
  • Try substituting the chicken with shrimp or tofu for a different protein option.
  • You can also add other vegetables like zucchini or cherry tomatoes for more variety.
