- 2 medium beets, roasted and peeled
- 4 cups mixed salad greens (such as arugula, spinach, and romaine)
- 4 ounces goat cheese, crumbled
- 1/4 cup walnuts, chopped and toasted
- 1/4 cup balsamic vinaigrette
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Wrap the beets in aluminum foil and roast for about 45-60 minutes, or until tender. Let them cool, then peel and slice into wedges.
- In a large salad bowl, combine the mixed salad greens and sliced beets.
- Sprinkle the crumbled goat cheese and toasted walnuts over the top of the salad.
- Drizzle the balsamic vinaigrette over the salad and toss gently to combine. Season with salt and pepper to taste.
- Serve immediately or chill in the refrigerator for up to 30 minutes before serving for a refreshing touch.

- For added sweetness, consider adding sliced apples or pears to the salad.
- Substitute feta cheese for goat cheese for a different flavor profile.
