Description

Ingredients

  • 2 medium beets, roasted and peeled
  • 4 cups mixed salad greens (such as arugula, spinach, and romaine)
  • 4 ounces goat cheese, crumbled
  • 1/4 cup walnuts, chopped and toasted
  • 1/4 cup balsamic vinaigrette
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F. Wrap the beets in aluminum foil and roast for about 45-60 minutes, or until tender. Let them cool, then peel and slice into wedges.
  2. In a large salad bowl, combine the mixed salad greens and sliced beets.
  3. Sprinkle the crumbled goat cheese and toasted walnuts over the top of the salad.
