Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas and melted coconut oil. Mix until well combined.
  3. Add the granulated sugar, beaten egg, and vanilla extract to the banana mixture. Stir until smooth.
  4. In a separate bowl, whisk together the baking soda, salt, cinnamon, and flour.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the blueberries until evenly distributed.
