- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 teaspoon olive oil
- Salt and pepper, to taste
- 1 cup cherry tomatoes, diced
- 1/4 cup fresh basil, chopped
- 1 clove garlic, minced
- 1 tablespoon balsamic vinegar
- 1/2 cup mozzarella cheese, shredded
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat the oven to 400°F.
- Season the chicken breasts with olive oil, salt, and pepper. Place them in a baking dish.
- In a medium bowl, combine the diced cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, and red pepper flakes (if using). Mix well.
- Spoon the tomato mixture evenly over the chicken breasts.
- Sprinkle the shredded mozzarella cheese on top of the tomato mixture.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove from the oven and let it rest for 5 minutes before serving.
Notes
- For a smoky flavor, grill the chicken instead of baking it.
- Substitute the cherry tomatoes with diced bell peppers or zucchini for a different twist.
