Description

Buffalo Chicken Stuffed Peppers are a delicious and spicy dish filled with ground chicken, buffalo sauce, and topped with melted cheddar cheese, all packed into bell peppers.


Ingredients

  • 1 pound ground chicken
  • 1 cup buffalo sauce (store-bought or homemade)
  • 4 large bell peppers (any color)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced celery
  • 1/4 cup diced green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.
  3. In a large skillet over medium heat, cook the ground chicken until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  4. Add the buffalo sauce, diced celery, green onions, garlic powder, onion powder, salt, and pepper to the skillet. Stir to combine and cook for an additional 2-3 minutes until heated through.
  5. Remove the skillet from heat and stir in half of the shredded cheddar cheese.
  6. Stuff each bell pepper with the buffalo chicken mixture, pressing down gently to pack it in. Top each pepper with the remaining cheddar cheese.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and the peppers are tender.
  9. Let the stuffed peppers cool for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

  • For a milder flavor, use a mild buffalo sauce or mix in some cream cheese to the chicken mixture.
  • You can substitute ground turkey or shredded rotisserie chicken for the ground chicken for a different texture and flavor.
