- 2 cups cooked white rice
- 2 cups fresh broccoli florets (or frozen, thawed)
- 1 cup shredded cheddar cheese
- 1 cup cream of mushroom soup (or homemade)
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 cup breadcrumbs (optional, for topping)
- 2 tablespoons butter, melted (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- In a large mixing bowl, combine the cooked rice, broccoli florets, 3/4 cup of the cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt. Mix until well combined.
- Pour the mixture into the prepared baking dish and spread it evenly.
- If using breadcrumbs, mix them with the melted butter in a small bowl, then sprinkle the mixture evenly over the casserole.
- Top the casserole with the remaining 1/4 cup of cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden.
- Remove from the oven and let it cool for about 5 minutes before serving.
Notes
- For a creamier texture, you can add an extra 1/4 cup of milk or a dollop of sour cream to the mixture before baking.
- For a protein boost, consider adding cooked chicken or turkey to the casserole.
