Description

A refreshing chilled soup made with cucumbers and yogurt, perfect for summer meals.

Ingredients

Scale
  • 2 large cucumbers, peeled and diced
  • 1 cup plain Greek yogurt
  • 1 cup vegetable broth, chilled
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional, for drizzling)
  • Fresh dill sprigs for garnish (optional)

Instructions

  1. In a blender or food processor, combine the diced cucumbers, Greek yogurt, vegetable broth, dill, minced garlic, and lemon juice. Blend until smooth and creamy.
  2. Taste the mixture and season with salt and pepper as needed. Blend again to combine.
  3. Transfer the soup to a bowl or container and refrigerate for at least 1 hour to chill and allow the flavors to meld.
  4. Before serving, stir the soup and adjust the seasoning if necessary. If desired, drizzle with olive oil and garnish with fresh dill sprigs.

Notes

  • For added texture, reserve some diced cucumber to stir in just before serving.
  • Experiment with different herbs like mint or parsley for a unique flavor twist.
