Ingredients

- 2 large cucumbers, peeled and diced
- 1 cup plain Greek yogurt
- 1 cup vegetable broth, chilled
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 tablespoon olive oil (optional, for drizzling)
- Fresh dill sprigs for garnish (optional)
Instructions
- In a blender or food processor, combine the diced cucumbers, Greek yogurt, vegetable broth, dill, minced garlic, and lemon juice. Blend until smooth and creamy.
- Taste the mixture and season with salt and pepper as needed. Blend again to combine.
- Transfer the soup to a bowl or container and refrigerate for at least 1 hour to chill and allow the flavors to meld.
- Before serving, stir the soup and adjust the seasoning if necessary. If desired, drizzle with olive oil and garnish with fresh dill sprigs.
Notes
- For added texture, reserve some diced cucumber to stir in just before serving.
