Description

Coconut Basil Chicken is a flavorful dish made with tender chicken thighs cooked in a creamy coconut milk sauce, infused with fresh basil, garlic, and ginger.

Ingredients

Scale
  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14 ounces) coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • Cooked rice, for serving

Instructions

  1. In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned, about 5-7 minutes.
  2. Reduce the heat to medium and add the minced garlic and grated ginger to the skillet. Sauté for 1-2 minutes until fragrant.
  3. Pour in the coconut milk, fish sauce, brown sugar, and lime juice. Stir to combine and bring to a gentle simmer.
  4. Let the mixture simmer for about 10 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened slightly.
  5. Stir in the chopped basil and cook for an additional 2 minutes until the basil is wilted.
  6. Serve the coconut basil chicken over cooked rice and enjoy!

Notes

  • For a spicier version, add sliced red chili peppers or a dash of sriracha to the sauce.
  • Substitute chicken thighs with chicken breasts or shrimp for a different protein option.
