- 8 ounces penne pasta
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1 cup spinach, chopped
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, seasoning with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and Italian seasoning, mixing until the cheese has melted and the sauce is smooth.
- Add the cooked penne pasta and chopped spinach to the skillet, tossing to combine and heat through.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute the heavy cream with half-and-half or a plant-based cream alternative.
- You can also add sun-dried tomatoes or grilled vegetables for extra flavor and nutrition.
