- 1 head of cauliflower, cut into florets
- 1 teaspoon salt, divided
- 1 cup shredded cheddar cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup green onions, finely chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 cup olive oil (for frying)
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5 minutes until tender. Drain and let cool slightly.
- Once cooled, use a clean kitchen towel to squeeze out excess moisture from the cauliflower. Transfer the cauliflower to a large mixing bowl and mash it with a fork or potato masher.
- Add the shredded cheddar cheese, flour, eggs, green onions, garlic powder, onion powder, black pepper, and paprika to the mashed cauliflower. Mix until well combined.
- Heat olive oil in a large skillet over medium heat. Scoop about 1/4 cup of the cauliflower mixture and form it into a patty. Carefully place the patty in the skillet. Repeat with remaining mixture, making sure not to overcrowd the pan.
- Cook each fritter for about 3-4 minutes on each side, or until golden brown and crispy. Transfer cooked fritters to the prepared baking sheet and keep warm in the oven while you finish cooking the rest.
- Serve warm with your favorite dipping sauce or enjoy them plain.
Notes
- For a healthier option, you can bake the fritters instead of frying. Simply place them on the baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown.
- Try adding different herbs or spices to the mixture, such as chopped fresh parsley or a pinch of cayenne pepper for a kick.
- You can also substitute the cheddar cheese with mozzarella or feta for a different flavor profile.
