Description

Crispy Cauliflower Fritters are a delicious and healthy treat made from mashed cauliflower, cheese, and spices, perfect for a snack or appetizer.


Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 teaspoon salt, divided
  • 1 cup shredded cheddar cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup green onions, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup olive oil (for frying)

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5 minutes until tender. Drain and let cool slightly.
  3. Once cooled, use a clean kitchen towel to squeeze out excess moisture from the cauliflower. Transfer the cauliflower to a large mixing bowl and mash it with a fork or potato masher.
  4. Add the shredded cheddar cheese, flour, eggs, green onions, garlic powder, onion powder, black pepper, and paprika to the mashed cauliflower. Mix until well combined.
  5. Heat olive oil in a large skillet over medium heat. Scoop about 1/4 cup of the cauliflower mixture and form it into a patty. Carefully place the patty in the skillet. Repeat with remaining mixture, making sure not to overcrowd the pan.
  6. Cook each fritter for about 3-4 minutes on each side, or until golden brown and crispy. Transfer cooked fritters to the prepared baking sheet and keep warm in the oven while you finish cooking the rest.
  7. Serve warm with your favorite dipping sauce or enjoy them plain.

Notes

  • For a healthier option, you can bake the fritters instead of frying. Simply place them on the baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown.
  • Try adding different herbs or spices to the mixture, such as chopped fresh parsley or a pinch of cayenne pepper for a kick.
