Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a shallow bowl, combine the crushed cornflakes, shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper.
  3. In another shallow bowl, place the all-purpose flour. In a third bowl, beat the eggs until well combined.
  4. Pat the chicken breasts dry with paper towels. Dredge each chicken breast in the flour, shaking off any excess.
  5. Next, dip it into the beaten eggs, allowing any excess to drip off.
  6. Finally, coat the chicken in the cornflake and cheese mixture, pressing gently to adhere.
  7. Place the coated chicken breasts on the prepared baking sheet. Lightly spray the tops with cooking spray or drizzle with olive oil for extra crispiness.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown and crispy. The internal temperature should reach 165°F.
  9. Let the chicken rest for a few minutes before slicing. Serve warm.
