- 1 medium cucumber, diced
- 1 ripe avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cherry tomatoes, halved
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 tablespoon fresh dill or parsley, chopped (optional)
Instructions
- In a medium bowl, combine the drained tuna, diced cucumber, diced avocado, red onion, and cherry tomatoes.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
- Pour the dressing over the tuna mixture and gently toss to combine, being careful not to mash the avocado.
- If using, sprinkle fresh dill or parsley on top and give it a final gentle toss.
- Serve immediately or chill in the refrigerator for 15-30 minutes to enhance the flavors.
Notes
- For added crunch, mix in some diced bell peppers or celery.
