Description

A refreshing and nutritious salad combining tuna, cucumber, and avocado, perfect for a light meal or snack.

Ingredients

Scale
  • 1 can (5 oz) tuna, drained
  • 1 medium cucumber, diced
  • 1 ripe avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh dill or parsley, chopped (optional)

Instructions

  1. In a medium bowl, combine the drained tuna, diced cucumber, diced avocado, red onion, and cherry tomatoes.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
  3. Pour the dressing over the tuna mixture and gently toss to combine, being careful not to mash the avocado.
  4. If using, sprinkle fresh dill or parsley on top and give it a final gentle toss.
  5. Serve immediately or chill in the refrigerator for 15-30 minutes to enhance the flavors.

Notes

  • For added crunch, mix in some diced bell peppers or celery.
  • Substitute the tuna with canned chicken or chickpeas for a different protein option.
