Ingredients

- 2 cups cucumber, diced
- 2 cups cantaloupe, diced
- 1 cup honeydew melon, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the diced cucumber, cantaloupe, honeydew melon, and red onion.
- In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until well combined.
- Pour the dressing over the melon and cucumber mixture. Gently toss to coat all the ingredients evenly.
- Add the chopped mint leaves and toss again lightly.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
- For added crunch, consider adding 1/4 cup of chopped walnuts or pecans.
