Dolly’s Butterscotch Pie is a creamy and delicious dessert that combines rich butterscotch flavor with a smooth filling, all nestled in a flaky pie crust.


Ingredients

  • 1 cup packed brown sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 3/4 cups whole milk
  • 3 large egg yolks, beaten
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 pre-baked 9-inch pie crust
  • Whipped cream for topping (optional)

Instructions

  1. In a medium saucepan, whisk together the brown sugar, cornstarch, and salt. Gradually add the milk while whisking to combine.
  2. Cook the mixture over medium heat, stirring constantly until it thickens and begins to bubble, about 8-10 minutes.
  3. Once thickened, remove the saucepan from the heat. Slowly stir a small amount of the hot mixture into the beaten egg yolks to temper them, then return the egg yolk mixture to the saucepan.
  4. Cook for an additional 2 minutes, stirring constantly. Remove from heat and stir in the butter and vanilla extract until fully combined.
  5. Pour the butterscotch filling into the pre-baked pie crust, smoothing the top with a spatula.
  6. Allow the pie to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to set.
  7. Before serving, top with whipped cream if desired.

Notes

  • For a richer flavor, use dark brown sugar instead of light brown sugar.
  • Add a sprinkle of sea salt on top of the whipped cream for a salted butterscotch twist.
