Description
A delicious and easy recipe for Garlic Butter Chicken with Broccoli, perfect for a quick weeknight dinner.
Ingredients
Scale
- 2 boneless, skinless chicken breasts (about 1 pound), cut into bite-sized pieces
- 2 cups broccoli florets
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 lemon, juiced
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the butter and minced garlic. Sauté for about 1-2 minutes until the garlic is fragrant but not browned.
- Add the broccoli florets to the skillet and stir to coat with the garlic butter. Cook for about 4-5 minutes until the broccoli is tender but still bright green.
- Return the cooked chicken to the skillet, pour in the lemon juice, and toss everything together. Cook for an additional 2-3 minutes to heat through.
- Remove from heat, garnish with chopped parsley, and serve immediately.
Notes
- For added flavor, consider marinating the chicken in lemon juice, garlic, and herbs for 30 minutes before cooking.
- You can substitute the broccoli with other vegetables like asparagus or green beans for a different twist.
