A delicious and easy recipe for grilled honey-glazed carrots that makes a perfect side dish.

- 2 pounds of baby carrots, peeled
- 3 tablespoons olive oil
- 3 tablespoons honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- Juice of 1 lemon
Instructions
- Preheat your grill to medium-high heat.
- In a large bowl, combine the olive oil, honey, salt, black pepper, garlic powder, thyme, and lemon juice. Whisk until well blended.
- Add the baby carrots to the bowl and toss until they are evenly coated with the honey mixture.
- Place the carrots on the grill in a single layer. Grill for about 10-15 minutes, turning occasionally, until they are tender and have nice grill marks.
- Remove the carrots from the grill and let them rest for a few minutes before serving. Drizzle any remaining glaze from the bowl over the carrots for extra flavor.
- Serve warm as a side dish.
Notes
- For added flavor, consider sprinkling some feta cheese or chopped parsley over the grilled carrots before serving.
- If you want a spicier kick, add a pinch of red pepper flakes to the glaze mixture.
