  • 2 medium zucchinis, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1/4 cup shredded mozzarella cheese (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  2. Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.
  3. Increase the heat to medium-high and add the ground turkey to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Stir in the diced zucchini, Italian seasoning, salt, and black pepper. Cook for another 5-6 minutes until the zucchini is tender.
  5. Add the diced tomatoes to the skillet and stir well. Let it simmer for an additional 2-3 minutes.
  6. If using, sprinkle the shredded mozzarella cheese on top and cover the skillet for 1-2 minutes until the cheese melts.
  7. Remove from heat and garnish with fresh basil if desired. Serve warm.
