  • 1 pound kielbasa sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the sliced kielbasa to the pot and cook for about 5 minutes, stirring occasionally, until the sausage is browned.
  4. Add the diced potatoes, chicken broth, dried thyme, paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
  5. Stir in the heavy cream and frozen peas, and cook for another 5 minutes until heated through.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
