A delicious and healthy kale and white bean soup that is perfect for any meal.
Ingredients

- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups vegetable broth
- 1 can (15 ounces) white beans, drained and rinsed
- 4 cups kale, chopped
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon lemon juice
- Grated Parmesan cheese (optional, for serving)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.
- Stir in the minced garlic, diced carrot, and diced celery. Cook for an additional 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, add the white beans, chopped kale, dried thyme, salt, and black pepper. Reduce the heat and let it simmer for about 15-20 minutes, or until the kale is tender.
- Stir in the lemon juice just before serving.
- Serve hot, garnished with grated Parmesan cheese if desired.
Notes
- For a heartier soup, add diced potatoes or cooked sausage.
- Substitute the kale with spinach or Swiss chard for a different flavor profile.
