Ingredients

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell pepper, diced (any color)
  • 1/2 cup black olives, sliced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup red onion, finely chopped
  • 1/2 cup Italian dressing
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, black olives, cheddar cheese, and red onion.
  3. Pour the Italian dressing over the pasta mixture and toss gently to combine.
  4. Season with salt and pepper to taste.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Before serving, give the salad a good stir and garnish with fresh parsley.
