Ingredients

  • 1 cup coconut milk
  • 1/4 cup sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a blender, combine the diced mangoes and coconut milk until smooth.
  2. In a saucepan, mix sugar, cornstarch, and salt.
  3. Gradually add the mango-coconut mixture to the saucepan, stirring continuously.
  4. Cook over medium heat until the mixture thickens, about 5-7 minutes.
  5. Remove from heat and stir in vanilla extract.
  6. Pour the pudding into serving dishes and refrigerate for at least 2 hours before serving.
