Margarita Shrimp Skewers are a refreshing grilled dish featuring marinated shrimp with a zesty lime and tequila flavor.

- 1 pound large shrimp, peeled and deveined
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 2 tablespoons tequila
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
Instructions
- In a large bowl, whisk together lime juice, olive oil, tequila, honey, minced garlic, chili powder, salt, and black pepper until well combined.
- Add the shrimp to the marinade, tossing to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer.
- Grill the skewers for 2-3 minutes on each side, or until the shrimp are pink and opaque.
- Remove from the grill and sprinkle with fresh cilantro. Serve with lime wedges on the side.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the marinade.
- Serve the shrimp skewers over a bed of rice or with a fresh salad for a complete meal.
