  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup crumbled queso fresco or shredded cheese
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. In a large bowl, combine the olive oil, smoked paprika, cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs and toss to coat evenly with the spice mixture. Let marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  2. Preheat your grill or grill pan over medium-high heat. Once hot, add the marinated chicken thighs and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Brush the chicken with barbecue sauce during the last few minutes of grilling.
  3. Remove the chicken from the grill and let it rest for 5 minutes. After resting, slice the chicken into strips.
  4. Warm the tortillas on the grill for about 30 seconds on each side or until pliable.
  5. Assemble the tacos by placing a few strips of grilled chicken on each tortilla. Top with shredded lettuce, diced tomatoes, crumbled queso fresco, and chopped cilantro.
