- 8 large eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers (any color)
- 1/2 cup diced cooked ham (or cooked bacon)
- 1/4 cup chopped green onions
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Cooking spray or olive oil for greasing
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or olive oil.
- In a large mixing bowl, whisk together the eggs and milk until well combined.
- Stir in the shredded cheddar cheese, diced bell peppers, diced ham, chopped green onions, salt, black pepper, and garlic powder. Mix until all ingredients are evenly distributed.
- Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 18-20 minutes, or until the egg bites are set and lightly golden on top.
- Remove from the oven and let cool for a few minutes before gently removing the egg bites from the muffin tin.
Notes
- For a vegetarian option, omit the meat and add more vegetables like spinach, mushrooms, or zucchini.
- Experiment with different cheeses such as feta or mozzarella, or add spices like paprika or chili flakes for extra flavor.
