- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 2 tablespoons zaatar spice blend
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, zested and juiced
- 1 cup cherry tomatoes, halved
- 1 red onion, cut into wedges
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine olive oil, zaatar, garlic powder, salt, black pepper, lemon zest, and lemon juice. Mix well to create a marinade.
- Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
- Place the marinated chicken thighs on a baking sheet lined with parchment paper. Arrange the cherry tomatoes and red onion around the chicken.
- Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature should reach 165°F (75°C).
- Remove from the oven and let rest for 5 minutes. Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the marinade.
- Serve with a side of couscous or quinoa for a complete meal.
