Santa Fe Chicken is a flavorful and easy slow cooker recipe featuring tender chicken breasts cooked with black beans, corn, and tomatoes, topped with melted cheddar cheese.

- 2 pounds boneless, skinless chicken breasts
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 can (14.5 ounces) diced tomatoes with green chilies, undrained
- 1 packet (1 ounce) taco seasoning
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro (optional)
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the bottom of a slow cooker. Season with salt and pepper.
- In a medium bowl, combine the black beans, corn, diced tomatoes (with their juices), taco seasoning, and salsa. Mix well.
- Pour the bean and corn mixture over the chicken in the slow cooker.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and easily shreds with a fork.
- Once cooked, shred the chicken in the slow cooker using two forks and mix it with the other ingredients.
- Sprinkle the shredded cheddar cheese on top, cover, and let it sit for an additional 10 minutes to melt the cheese.
- Serve warm, garnished with fresh cilantro if desired.

- For a spicier dish, add diced jalapeños or a dash of hot sauce to the bean mixture.
- Serve over rice or in tortillas for a delicious wrap or burrito option.
