Description
A warm and hearty soup made with Italian sausage and butternut squash, perfect for cozy nights.
Ingredients

- 2 tablespoons olive oil
- 1 pound Italian sausage, casings removed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium butternut squash, peeled and cubed (about 4 cups)
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup kale, chopped (optional)
- 1 tablespoon apple cider vinegar
Instructions
- Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.
- Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the cubed butternut squash, chicken broth, thyme, oregano, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20-25 minutes, or until the squash is tender.
- If using kale, stir it in during the last 5 minutes of cooking.
- Remove from heat and stir in the apple cider vinegar. Adjust seasoning if necessary.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For a creamier soup, blend half of the soup with an immersion blender and then mix it back in.
- Try adding a pinch of red pepper flakes for a spicy kick.
- Substitute the butternut squash with sweet potatoes for a different flavor profile.
