Description
A delicious and hearty skillet dish featuring ground turkey and potatoes, perfect for a quick weeknight meal.
Ingredients
Scale
- 2 tablespoons olive oil
- 1 pound ground turkey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 medium potatoes, diced (about 4 cups)
- 1 cup diced bell pepper (any color)
- 1 cup diced onion
- 1 cup chicken broth
- 1 cup frozen peas
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for another 2 minutes until the spices are fragrant.
- Add the diced potatoes, bell pepper, and onion to the skillet. Stir to combine and cook for about 5 minutes, allowing the vegetables to soften slightly.
- Pour in the chicken broth, cover the skillet, and reduce the heat to low. Let it simmer for 15-20 minutes, or until the potatoes are tender, stirring occasionally.
- Stir in the frozen peas and cook for an additional 5 minutes until heated through.
- Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
Notes
- For added flavor, try incorporating different spices such as cumin or chili powder.
- Substitute sweet potatoes for regular potatoes for a sweeter taste and extra nutrients.
