Description

A refreshing Shaved Asparagus Salad topped with creamy burrata and savory prosciutto, perfect for a light meal or appetizer.


Ingredients

Scale
  • 1 pound fresh asparagus, trimmed
  • 8 ounces burrata cheese
  • 4 ounces thinly sliced prosciutto
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • 1/4 cup shaved Parmesan cheese

Instructions

  1. Using a vegetable peeler, shave the asparagus into thin ribbons. If the asparagus is thick, you can also slice it very thinly. Place the shaved asparagus in a large bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle the dressing over the shaved asparagus and toss gently to combine.
  3. On a serving platter, arrange the dressed asparagus. Tear the burrata into pieces and place it on top of the asparagus.
  4. Drape the prosciutto slices over the salad.
  5. Sprinkle the shaved Parmesan cheese and fresh basil leaves over the top. Serve immediately.
