Description

Shepherd’s Pie with Ground Beef is a comforting dish made with a savory ground beef filling topped with creamy mashed potatoes.


Ingredients

  • 2 pounds ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 cups mashed potatoes (prepared from about 2 pounds of potatoes)
  • 1 cup shredded cheddar cheese (optional)
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 7-10 minutes. Drain excess fat if necessary.
  5. Stir in the mixed vegetables, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for another 5 minutes until the vegetables are tender.
  6. Spread the beef and vegetable mixture evenly in a 9×13 inch baking dish.
  7. Top the mixture with the prepared mashed potatoes, spreading them evenly over the beef layer. If desired, sprinkle shredded cheddar cheese on top.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the filling is bubbling.
  9. Let it cool for 5-10 minutes before serving.

Notes

  • For a healthier version, use ground turkey or chicken instead of beef.
