Description

Shrimp and Sausage Foil Packets are a delicious and easy dinner option, combining shrimp, smoked sausage, and vegetables all cooked in a convenient foil packet.


Ingredients

  • 2 cups baby potatoes, halved
  • 1 pound smoked sausage, sliced into rounds
  • 1 pound large shrimp, peeled and deveined
  • 2 cups corn kernels (fresh, frozen, or canned)
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • 1 lemon, sliced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. In a large bowl, combine the halved baby potatoes, sliced smoked sausage, corn, minced garlic, olive oil, paprika, Old Bay seasoning, salt, and pepper. Toss until everything is well coated.
  3. Lay out four large pieces of aluminum foil (about 12 inches each). Divide the mixture evenly among the foil pieces, placing it in the center of each.
  4. Top each portion with a few slices of lemon. Fold the sides of the foil over the mixture and seal tightly to create packets.
  5. Place the foil packets on the grill or in the oven. Cook for 25-30 minutes, or until the potatoes are tender and the shrimp are cooked through.
  6. Carefully open the packets (watch out for steam) and garnish with fresh parsley before serving.

  • For a spicier kick, add a pinch of cayenne pepper or some diced jalapeños to the mixture.
