Shrimp and Sausage Foil Packets are a delicious and easy dinner option, combining shrimp, smoked sausage, and vegetables all cooked in a convenient foil packet.

- 2 cups baby potatoes, halved
- 1 pound smoked sausage, sliced into rounds
- 1 pound large shrimp, peeled and deveined
- 2 cups corn kernels (fresh, frozen, or canned)
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon Old Bay seasoning
- Salt and pepper to taste
- 1 lemon, sliced
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your grill or oven to 400°F (200°C).
- In a large bowl, combine the halved baby potatoes, sliced smoked sausage, corn, minced garlic, olive oil, paprika, Old Bay seasoning, salt, and pepper. Toss until everything is well coated.
- Lay out four large pieces of aluminum foil (about 12 inches each). Divide the mixture evenly among the foil pieces, placing it in the center of each.
- Top each portion with a few slices of lemon. Fold the sides of the foil over the mixture and seal tightly to create packets.
- Place the foil packets on the grill or in the oven. Cook for 25-30 minutes, or until the potatoes are tender and the shrimp are cooked through.
- Carefully open the packets (watch out for steam) and garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper or some diced jalapeños to the mixture.
- Substitute the smoked sausage with chicken sausage or turkey sausage for a lighter option.
