Description

A hearty and flavorful slow-cooked beef casserole perfect for summer meals.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 red bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove the beef and set aside.
  2. In the same skillet, add the diced onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.
  3. In a slow cooker, combine the browned beef, sautéed onion and garlic, sliced carrots, diced potatoes, chopped red bell pepper, diced tomatoes, beef broth, Worcestershire sauce, thyme, oregano, salt, and pepper.
  4. Stir everything together until well mixed. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the vegetables are cooked through.
  5. Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

  • For a richer flavor, add a splash of red wine to the slow cooker along with the beef broth.
  • You can substitute the beef chuck with stew meat or even chicken for a lighter option. Adjust cooking times accordingly.
