- 1 pound ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) tomato sauce
- 2 cups beef or vegetable broth
- 1 cup uncooked rice (white or brown)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheese (cheddar or mozzarella)
- Fresh parsley, chopped (for garnish, optional)
Instructions
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat and transfer the meat to the slow cooker.
- Add the diced onion, minced garlic, and diced bell pepper to the slow cooker.
- Pour in the diced tomatoes, tomato sauce, and broth. Stir to combine.
- Add the uncooked rice, oregano, basil, salt, and black pepper. Mix well.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the rice is tender.
- Once cooked, stir in the shredded cheese until melted.
- Serve hot, garnished with fresh parsley if desired.

- For a vegetarian version, substitute the meat with lentils or a plant-based ground meat alternative.
