- 2 large chicken breasts (about 1 pound total)
- 1 cup fresh strawberries, hulled and sliced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 cup fresh basil, chopped
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, balsamic vinegar, and honey to create a marinade.
- Place the chicken breasts in a baking dish and pour the marinade over them, ensuring they are well-coated. Let them marinate for at least 15 minutes.
- Scatter the sliced strawberries and chopped basil over the marinated chicken.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- If using, sprinkle crumbled feta cheese over the chicken during the last 5 minutes of baking.
- Remove from the oven and let the chicken rest for 5 minutes before slicing. Serve warm.
Notes
- For added flavor, marinate the chicken for up to 2 hours in the refrigerator.
- Substitute the strawberries with peaches or mango for a different fruity twist.
