- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 16 ounces cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons strawberry jam
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared baking pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese with ½ cup of sugar and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition until fully incorporated.
- Pour the cream cheese mixture over the crust in the baking pan, spreading it evenly. Arrange the sliced strawberries on top of the cheesecake layer. Drizzle the strawberry jam over the strawberries.
- Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 2 hours before slicing into bars.
Notes
- These bars can be served chilled or at room temperature.
- For a chocolate twist, try adding cocoa powder to the cream cheese mixture or drizzling melted chocolate over the top before serving.
- You can also substitute the strawberries with other berries like blueberries or raspberries for a different flavor profile.
