A creamy and flavorful Sun-Dried Tomato Hummus that is perfect for dipping or spreading.
Ingredients

- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/2 cup sun-dried tomatoes, packed in oil, drained
- 1/4 cup tahini
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- Water as needed for consistency
Instructions
- In a food processor, combine the chickpeas, sun-dried tomatoes, tahini, olive oil, lemon juice, garlic, and ground cumin.
- Blend until smooth, scraping down the sides as needed.
- If the hummus is too thick, add water a tablespoon at a time until you reach your desired consistency.
- Season with salt and pepper to taste. Blend again to combine.
- Transfer the hummus to a serving bowl and drizzle with additional olive oil if desired.
- Serve with pita chips, fresh vegetables, or spread on sandwiches.
Notes
- For a spicier version, add a pinch of red pepper flakes or a dash of hot sauce.
- Substitute roasted red peppers for sun-dried tomatoes for a different flavor profile.
