A delicious and easy recipe for Sweet Hawaiian Crockpot Chicken, perfect for a family dinner.

- 2 pounds boneless, skinless chicken thighs
- 1 cup pineapple chunks (fresh or canned, drained)
- 1 cup bell pepper, diced (red or green)
- 1/2 cup onion, diced
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1 tablespoon cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
- Cooked rice, for serving
- Chopped green onions, for garnish
Instructions
- Place the chicken thighs in the bottom of the crockpot.
- In a medium bowl, mix together the pineapple chunks, bell pepper, onion, soy sauce, brown sugar, honey, garlic, ginger, and black pepper. Pour this mixture over the chicken.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- If you prefer a thicker sauce, mix the cornstarch with water in a small bowl until smooth. Stir this mixture into the crockpot during the last 30 minutes of cooking.
- Once cooked, shred the chicken with two forks and mix it back into the sauce.
- Serve the chicken over cooked rice and garnish with chopped green onions.
Notes
- For a spicier kick, add 1-2 teaspoons of sriracha or red pepper flakes to the sauce.
- You can substitute chicken thighs with boneless, skinless chicken breasts if preferred, but adjust cooking time as breasts may cook faster.
