- 1 medium onion, diced
- 1 bell pepper, diced (any color)
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) kidney beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 can (28 ounces) diced tomatoes (with juices)
- 1 packet taco seasoning (about 1 ounce)
- 2 cups beef broth (or vegetable broth)
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (for topping)
- 1 cup sour cream (for topping)
- Tortilla chips (for serving)
Instructions
- In a large pot or Dutch oven, brown the ground beef (or turkey) over medium heat until fully cooked. Drain excess fat if necessary.
- Add the diced onion, bell pepper, and minced garlic to the pot. Sauté for about 5 minutes, or until the vegetables are softened.
- Stir in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and beef broth. Mix well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered for about 20-25 minutes, stirring occasionally.
- Taste and season with salt and pepper as needed.
- Serve hot, topped with shredded cheddar cheese, a dollop of sour cream, and tortilla chips on the side.
Notes
- For a vegetarian version, substitute the ground beef with lentils or a meat alternative and use vegetable broth.
- Add diced jalapeños or a splash of hot sauce for extra heat, or top with avocado slices for a creamy texture.
