Description

Delicious Thai Chicken Lettuce Wraps that are easy to make and perfect for a healthy meal.


Ingredients

  • 1 pound ground chicken
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, finely chopped
  • 1 cup shredded carrots
  • 1/4 cup soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 head of butter or romaine lettuce, leaves separated
  • Chopped fresh cilantro, for garnish
  • Chopped peanuts, for garnish

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent.
  2. Stir in the minced garlic and ginger, cooking for an additional 1 minute until fragrant.
  3. Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  4. Mix in the red bell pepper and shredded carrots, cooking for another 2-3 minutes until the vegetables are tender.
  5. In a small bowl, whisk together the soy sauce, fish sauce, brown sugar, lime juice, and red pepper flakes (if using). Pour this mixture over the chicken and vegetable mixture, stirring well to combine. Cook for an additional 2 minutes to heat through.
  6. Remove from heat and let cool slightly.
  7. To serve, spoon the chicken mixture into the lettuce leaves, garnish with chopped cilantro and peanuts, and enjoy!

  • For a vegetarian option, substitute ground chicken with crumbled tofu or tempeh.
  • Add a splash of sriracha or your favorite hot sauce for an extra kick.
