Description

A delicious recipe for blackened salmon fillets stuffed with a creamy spinach and Parmesan filling.


Ingredients

  • 2 (6-ounce) salmon fillets
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the chopped spinach, cream cheese, Parmesan cheese, garlic powder, onion powder, black pepper, and paprika. Mix until well combined.
  3. Using a sharp knife, create a pocket in each salmon fillet by slicing horizontally, being careful not to cut all the way through.
  4. Stuff each salmon fillet with the spinach and cheese mixture, pressing gently to secure the filling inside.
  5. Heat the olive oil and butter in an oven-safe skillet over medium-high heat. Once hot, add the stuffed salmon fillets, skin side down, and sear for about 3-4 minutes until the skin is crispy.
  6. Carefully flip the fillets and transfer the skillet to the preheated oven. Bake for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Remove from the oven and let rest for a couple of minutes. Serve with lemon wedges on the side.

Notes

  • For added flavor, marinate the salmon fillets in lemon juice, garlic, and herbs for 30 minutes before stuffing.
  • Substitute the spinach with kale or arugula for a different taste and texture.
