A delicious recipe for blackened salmon fillets stuffed with a creamy spinach and Parmesan filling.

- 2 (6-ounce) salmon fillets
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon olive oil
- 1 tablespoon butter
- Lemon wedges, for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the chopped spinach, cream cheese, Parmesan cheese, garlic powder, onion powder, black pepper, and paprika. Mix until well combined.
- Using a sharp knife, create a pocket in each salmon fillet by slicing horizontally, being careful not to cut all the way through.
- Stuff each salmon fillet with the spinach and cheese mixture, pressing gently to secure the filling inside.
- Heat the olive oil and butter in an oven-safe skillet over medium-high heat. Once hot, add the stuffed salmon fillets, skin side down, and sear for about 3-4 minutes until the skin is crispy.
- Carefully flip the fillets and transfer the skillet to the preheated oven. Bake for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let rest for a couple of minutes. Serve with lemon wedges on the side.
Notes
- For added flavor, marinate the salmon fillets in lemon juice, garlic, and herbs for 30 minutes before stuffing.
- Substitute the spinach with kale or arugula for a different taste and texture.
