A quick and delicious twist on classic chicken parmesan, this Lazy Chicken Parmesan Grilled Cheese combines tender chicken, marinara sauce, and gooey cheese between crispy sourdough bread.

- 2 slices of sourdough bread
- 1 tablespoon olive oil
- 1 cup cooked chicken, shredded
- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Heat the olive oil in a skillet over medium heat.
- In a bowl, combine the shredded chicken, marinara sauce, mozzarella cheese, Parmesan cheese, Italian seasoning, salt, and pepper. Mix well.
- Place one slice of sourdough bread in the skillet. Spoon the chicken mixture on top, spreading it evenly.
- Top with the second slice of sourdough bread. Cook for about 3-4 minutes until the bottom is golden brown.
- Carefully flip the sandwich and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
- Remove from the skillet, slice in half, and garnish with fresh basil leaves if desired.
Notes
- For a spicier kick, add red pepper flakes to the chicken mixture.
- Substitute the chicken with turkey or a plant-based protein for a different flavor profile.
