- 2 large sweet potatoes, peeled and diced into 1-inch cubes
- 1 pound smoked sausage, sliced into 1/2-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the diced sweet potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet and roast in the preheated oven for 20 minutes.
- While the sweet potatoes are roasting, prepare the honey garlic sauce. In a small saucepan over medium heat, combine honey, soy sauce, minced garlic, and apple cider vinegar. Stir until well mixed and bring to a simmer. Cook for 2-3 minutes until slightly thickened, then remove from heat.
- After 20 minutes, remove the baking sheet from the oven and add the sliced sausage to the sweet potatoes. Toss everything together and return to the oven for an additional 15-20 minutes, or until the sweet potatoes are tender and the sausage is heated through.
- Drizzle the honey garlic sauce over the sausage and sweet potatoes, tossing to coat. Garnish with chopped parsley before serving.

- For a spicy kick, add red pepper flakes to the sweet potato mixture before roasting.
- Substitute the smoked sausage with turkey sausage or chicken sausage for a lighter option.
