Description

Spicy Korean Gochujang Beef Noodles is a flavorful dish that combines rice noodles with ground beef and a spicy gochujang sauce, topped with fresh vegetables.


Ingredients

  • 8 ounces of rice noodles
  • 1 pound of ground beef
  • 2 tablespoons of vegetable oil
  • 1 small onion, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, minced
  • 1/4 cup of gochujang (Korean chili paste)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of honey
  • 1 cup of bell peppers, sliced (any color)
  • 1 cup of snap peas
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced onion and sauté for 2-3 minutes until softened.
  3. Add the minced garlic and ginger to the skillet and cook for an additional 1 minute until fragrant.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  5. Stir in the gochujang, soy sauce, sesame oil, and honey. Mix well to combine and let it simmer for 2-3 minutes.
  6. Add the sliced bell peppers and snap peas to the skillet. Cook for another 3-4 minutes until the vegetables are tender-crisp.
  7. Toss the cooked rice noodles into the skillet, mixing everything together until the noodles are well coated with the sauce.
  8. Serve hot, garnished with sliced green onions and sesame seeds.

  • For a vegetarian version, substitute ground beef with crumbled tofu or tempeh.
  • Add more vegetables like carrots or broccoli for extra nutrition and color.
