Description

A delicious and quick Sweet Chili Shrimp and Asparagus Stir-Fry that combines succulent shrimp with fresh asparagus and vibrant bell peppers, all tossed in a sweet and savory sauce.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 pound asparagus, trimmed and cut into 2-inch pieces
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  1. In a large skillet or wok, heat the olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until they turn pink. Remove the shrimp from the skillet and set aside.
  2. In the same skillet, add the asparagus and red bell pepper. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
  3. Add the minced garlic and grated ginger to the skillet, stirring for about 30 seconds until fragrant.
  4. Return the shrimp to the skillet and pour in the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Stir well to combine and cook for an additional 2-3 minutes until everything is heated through. Season with salt and pepper to taste.
  5. Serve the stir-fry over cooked rice or quinoa.

Notes

  • For added crunch, toss in some chopped cashews or peanuts before serving.
  • Substitute the shrimp with chicken or tofu for a different protein option.
