Directions
- Preheat your oven to 400°F (200°C).
- In your preheated skillet over medium heat, add the ground meat. Cook for about 6–8 minutes, stirring occasionally, until browned.
- Stir in optional vegetables with salt and pepper. Simmer for about 5 minutes.
- Boil a pot of water and add chopped sweet potatoes. Cook for about 15 minutes, until fork-tender. Drain well.
- Mash the drained sweet potatoes and mix in ghee or coconut oil and coconut milk.
- Spread the meat filling in the skillet, then dollop the sweet potato mash on top and smooth it out.
- Bake in the oven for 25–30 minutes.
- Let the pie rest for about 10 minutes before serving.
