  • 1 tsp Garlic Powder
  • 1 tsp White Pepper Substitute with black pepper if needed.
  • 1 tsp Sumac Lemon zest can be used as a substitute.
  • 1 tsp Paprika Adjust to taste.
  • 1 tsp Red Chili Powder Adjust to taste.
  • 1 tsp Black Pepper Adjust to taste.
  • 1 tsp Salt Adjust to taste.
For the Skewers
  • 6 pieces Wooden Skewers Soak in water for 30 minutes.
  • 6 pieces Metal Skewers No soaking needed.

Preparation Steps
  1. Prepare Marinade: In a large mixing bowl, whisk together plain yogurt, lemon juice, vegetable oil, tomato paste, yellow mustard, minced garlic, and all spices until smooth.
  2. Cut Chicken: Cut boneless skinless chicken into even 1-inch cubes for consistent cooking.
  3. Marinate: Toss chicken in the marinade, cover, and refrigerate for at least 4 hours or overnight.
  4. Prep Skewers: Soak wooden skewers in water for 30 minutes; prepare metal skewers if using.
  5. Preheat Grill: Heat grill to medium (about 350°F/175°C) for proper cooking.
  6. Skewer Chicken: Thread marinated chicken cubes onto skewers, leaving space between pieces.
  7. Grill: Cook skewers for approximately 5 minutes per side until golden brown and internal temperature reaches 165°F.
  8. Rest: Let skewers rest under foil or pita for about 10 minutes.
  9. Serve: Serve skewers hot with pita, garlic sauce, and vegetables.
