Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup plain Greek yogurt
  • 1 large ripe banana mashed
  • 2 large eggs
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk more if needed
  • Butter or oil for cooking

Method
 

  1. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  2. In another bowl, combine the Greek yogurt, mashed banana, eggs, honey (or maple syrup), vanilla extract, and milk. Mix until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. If the batter is too thick, add a little more milk to reach your desired consistency.
  4. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
  6. Repeat with the remaining batter, adding more butter or oil as needed.
  7. Serve warm with your favorite toppings such as sliced bananas, maple syrup, or yogurt.
