Ingredients
  

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 2 cloves garlic minced
  • 1 large egg
  • 1/4 cup BBQ sauce plus extra for topping
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper optional
  • 1/4 cup chopped fresh parsley for garnish

Method
 

  1. Preheat the oven to 350°F. Grease a muffin tin or line with muffin liners.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, onion, bell pepper, garlic, egg, BBQ sauce, Worcestershire sauce, salt, black pepper, smoked paprika, and cayenne pepper (if using). Mix until well combined.
  3. Divide the meat mixture evenly among the muffin cups, filling each about three-quarters full. Drizzle a little extra BBQ sauce on top of each muffin.
  4. Bake in the preheated oven for 25-30 minutes, or until the meatloaf muffins are cooked through and reach an internal temperature of 160°F. Let them cool for a few minutes before removing from the tin.
  5. Garnish with chopped parsley before serving.
